Interesting line from Dracula

From Chapter 10 of Bram Stoker’s Dracula:

When we were shown in, Mrs. Westenra met us. She was alarmed, but not nearly so much as I expected to find her. Nature in one of her beneficient moods has ordained that even death has some antidote to its own terrors. Here, in a case where any shock may prove fatal, matters are so ordered that, from some cause or other, the things not personal, even the terrible change in her daughter to whom she is so attached, do not seem to reach her. It is something like the way dame Nature gathers round a foreign body an envelope of some insensitive tissue which can protect from evil that which it would otherwise harm by contact. If this be an ordered selfishness, then we should pause before we condemn any one for the vice of egoism, for there may be deeper root for its causes than we have knowledge of.

Pizza Dough recipe; It’s yummy yo

Ingredients:

3 to 3 & 1/2 cups of bread flour (I use King Arthur flour)

1 cup of warm spring water

1/2 teaspoon of sea salt

2 tablespoons of honey

1/4 to 1/2 teaspoon of molasses

1 to 2 tablespoons of olive oil

1 packet of yeast

Mix the water (warm), salt, honey and molasses together. Once blended, then mix in the yeast. Let it sit for about 5 minutes so the yeast can do it’s thing.

Then mix in the olive oil and 1 cup of flour. Once that’s blended in well, mix in the rest of the flour. Add a little more water if needed. It should turn into a ball. Knead it for a few minutes, form into a ball.

Place the ball in a bowl coated with olive oil, cover w/damp cloth and let it rise for a few hours (until it doubles in size).

Then pound it back down, knead it. Form into a ball, cut it in half for two medium sized pizza doughs.

We bake it on a stone (with a sprinkling of cornmeal) at 450 for 15 minutes. Also, I usually make two pizzas at once, bake one and freeze the other. With the frozen one, I bake it on the stone at 350 for about 30 minutes.
